Proprietor, Roman Manser completes your retreat experience by serving delicious a-la-carte meals in our cosy dining room complete with wood fire.

In fact, food forms a large part of our operation.

Being a Swiss chef, pastry chef and chocolatier, Roman is never far from the kitchen cooking up a storm!

 

 

 

Our CHOCOLATE APPRECIATION COURSE will take you through the history and uses of chocolate as well as introduce you to the raw products of the cacao tree – its pods, seeds & nibs, and how these are processed to create chocolate.

You will learn how to taste chocolate using the five senses and explore multiple/single origin and single plantation chocolate from around the world including Papua New Guinea, Equador, Peru, Venezuela, Costa Rica & Switzerland.

You will leave with a certificate of completion and a sample bag of high quality chocolates from around the world!

The Caca-oh! Chocolate School offers a range of experiences for people who love chocolate!

 

Level I

 

Full day/ two half day course duration. A fantastic practical course designed for a maximum of 4 people (each person enjoys the use of their own chocolate table). The Caca-oh! Chocolate School's mission is to show people how they can use basic items in their kitchen to create wonderful showpieces and chocolates. This course will teach people how to make praline fillings, how to temper chocolate & how to enrobe chocolates. Students will learn decorating techniques and how to create an elegant showpiece to show family and friends.

We will generally be offering this course as an in-house package as not only do we want to encourage people to stay and enjoy our area, it makes it easier to create showpieces and complete the enrobing/finishing process of chocolates overnight. A typical Level 1 and Level 2 course would look like:

  • Arrive Saturday late morning

  • Enjoy a light lunch on your balcony

  • Commence first session of course

    • elements of chocolate appreciation course as this is a prerequisite for Level 1/2

    • learn how to temper chocolate

    • make praline fillings

    • commence work on showpiece

    • create individual chocolate desserts for dinner

Enjoy an a-la-carte dinner in our dining room finishing with a dessert sampler of your combined chocolate creations
Savour a late breakfast on your balcony in fine weather or in the dining room
Commence the second session of course

  • enrobe your chocolates

  • finish/decorate your chocolates

  • finish your chocolate showpiece to take home

Depart with a memento certificate, sample bag full of high quality chocolates from around the world and a special gift from the Caca-oh! Chocolate School.


Cost: $199 (course) + $70-80 (accommodation) p/p including everything listed above except your main meal. This course requires a minimum of 2 people to run.

Level II

Level 1 is a pre-requisite for attending level 2 courses. The level 2 course will further your skill in the art of chocolate making and decoration.
